Any warm day could use a tasty salad - this one’s without the green leaves but still wholesome and so refreshing. The combination of vegetables with the tanginess of the dressing and parsley brings all those fresh flavors together - just what I need to cool me down in the California summer.


1 cucumber
1 tomato
2 carrots
1 small red onion
1 lemon juiced
½ teaspoon salt
sprinkled fresh ground black pepper
pinch of brown raw sugar
1 stem parsley leaves(chopped)


  1. Chop all the raw veggies, mix the other ingredients in a bowl and then add to salad.
  2. Mix well , garnish with chopped parsley leaves and serve cold.
