Farro Salad

While ordering brunch at one of the popular San Diego spots my sister in law happened to notice a peculiar but rather enticing looking plate on the table next to us. Last minute order changes for me are almost always a bad idea but for my sister in law, it’s a different story. Her farro salad order became the highlight of the day!


1 cup farro seeds (soaked overnight for 8 hours)
1 cup green beans (chopped)
½ cup scallions (chopped)
1 cup red onion (chopped)
1 teaspoon olive oil


  1. In a pan heat oil, add green beans, red onions, salt and pepper. Sautee for a few minutes till beans are cooked.
  2. Drain water and rinse farro.
  3. In a small pot boil 2.5 cups water with a little salt and bring farro to a boil until soft. Strain water from farro and place in a bowl.
  4. Mix in cooked veggies.
  5. Serve at room temperature, add scallions for garnish. For a slightly different taste add 1 tabelspoon balsamic vinegar and mix.


If you're not able to soak the farro for 8 hours then soak in boiling water for 30 minutes to an hour instead. Also, substitute or add any crispy veggies, cherry tomatoes are a great addition.
