Tofu & Bok Choy Stir Fry

This tofu stir fry recipe is easy to cook, healthy and delicious. The first time we tried it, my husband and I couldn't stop eating it and finished the whole bowl. Served over hot rice it is a complete meal.


Organic firm tofu cut into 1 inch by 1 inch by 1/2 inch pieces
Chili black bean sauce 1 to 2 tablespoons depending on spice level
2 - 3 pods garlic minced
1 cubic inch piece of ginger cut thin and flat
1.5 tablespoon soy sauce
1.5 tablespoon Chinese cooking wine
1 yellow onion - diced
1 red bell pepper - diced
1 green bell pepper - diced
Baby bok choy peeled and washed well


  1. In one table spoon of oil, add 1 tablespoon of black bean sauce and sauté for a minute.
  2. Add tofu and cook for a minute on each side, remove from pan.
  3. In a table spoon of oil add 1 tablespoon of black bean sauce, garlic and ginger and sauté for a minute or two.
  4. Add veggies (bok choy last) and sauté for a minute on high heat. Add soy sauce and cooking wine mix and cover for a minute.
  5. Add back the tofu and gently mix.
  6. Serve hot on a bed of rice.
