This makes the perfect appetizer for any meal...especially if you're watching your portions. The red bell pepper has a crisp freshness in every bite while the other ingredients only add to the delicate flavors of this delicious salad. Just a sprinkle of salt and some lemon juice makes the perfect dressing. I added chickpeas for some protein.


1/4 cup garbanzo beans (chickpeas)
1/4 cup cucumber (chopped)
1/4 cup tomato (chopped)
1/8 cup red onion (chopped)
1/4 cup red bell pepper (chopped)
1/2 lemon
1 tablespoon chopped parsley
1/4 teaspoon salt


  1. Toss all the veggies together in a bowl
  2. Add salt, lemon juice and parsley
  3. Mix well and serve
