Using ingredients with cleansing properties and fresh summer flavors, this delicious recipe will help you shed those unwanted winter pounds and take the summer by storm!

Ingredients

For the salad
1 large broccoli head (chopped fine in a food processor)
1/2 large cauliflower head (chopped fine in a food processor)
6 medium carrots (peeled and shredded)
1/2 raw beet (chopped into small cubes)
1/4 cup currants or raisins
2 tablespoons cilantro
2 tablespoons parsley
2 tablespoons kelp or seaweed granules (optional)
1/4 cup raw sunflower seeds or 1/4 cup raw pistachios (optional)
For the dressing
1/4 avocado
1 large garlic clove
1 lemon (juice and zest)
2 tablespoons water
1 tablespoons orange juice
1 teaspoon turmeric
1/4 teaspoon ginger
1/4 teaspoon Celtic sea salt or sea salt

Instructions

  1. For the dressing blend all the ingredients together in a magic bullet or food processor. Add more water if you desire a thinner consistency.
  2. Toss all the ingredients together in a bowl and serve cold.
