I have never had juicier asparagus than when I bake them and I love making this recipe because it is super duper easy. It saves me tons of time to focus on the main dish as this usually serves as a nice side. You can use any dressing or sauce you like, but I love the tang of the mustard on the crunchy juicy sprigs, especially when it seeps into the grooves of the asparagus heads.
- Wash the asparagus and chop off the bottom end if hard. Place them in a lined baking tray.
- Mix the oil and mustard in a small bowl and pour on top of the asparagus. With a basking brush, make sure that every piece of asparagus is well covered with the mustard spread.
- Broil in oven on tray at 350 degrees for 15-20 minutes or until asparagus is cooked thoroughly. Don’t let the mustard burn.
- Serve warm.
If you're using really old or large asparagus with a tough outter skin, you may want to peel that out and blanch the asparagus first before putting into the oven to broil.
