This simple way to snack on healthy cooked veggies is delicious! It's a quick appetizer which can get fancier on the basis of how you serve it - on a baguette or even on oven warmed pita bread nicely cut to individual size. The hint of fresh garlic mixed with coriander powder creates a great fresh flavor. I love sourdough bread so that's my preference but use whatever you have at home. Packed with nutrients it makes a great lunch for the kiddos too!
- In a hot pan add the oil, then the garlic and let it sizzle for a minute or two.
- Add the mushrooms first with salt so that their water starts evaporating
- Then add the peppers along with the turmeric and the coriander powder.
- Serve on a toasted baguette or any bread of your choice.
You can use other veggies of your choice but I find the juiciness of the mushrooms mixed with the crispy peppers makes a perfect combination. The calories account for 3 slices of whole wheat toast.
