This simple way to snack on healthy cooked veggies is delicious! It's a quick appetizer which can get fancier on the basis of how you serve it - on a baguette or even on oven warmed pita bread nicely cut to individual size. The hint of fresh garlic mixed with coriander powder creates a great fresh flavor. I love sourdough bread so that's my preference but use whatever you have at home. Packed with nutrients it makes a great lunch for the kiddos too!


1 cup mushrooms (of your choice and chopped)
1 cup green bell peppers (chopped)
2 garlic pods (chopped)
salt to taste
1 teaspoon coriander powder
pinch of turmeric
1 teaspoon oil


  1. In a hot pan add the oil, then the garlic and let it sizzle for a minute or two.
  2. Add the mushrooms first with salt so that their water starts evaporating
  3. Then add the peppers along with the turmeric and the coriander powder.
  4. Serve on a toasted baguette or any bread of your choice.


You can use other veggies of your choice but I find the juiciness of the mushrooms mixed with the crispy peppers makes a perfect combination. The calories account for 3 slices of whole wheat toast.
