Grilled Cheese Sandwich

This kids favorite is finally made healthy with non-processed ingredients and 'hidden' vegetables. Kids love its cheesy flavor while moms pride the healthy goodness camouflaged inside. I usually like it chunky and add strips of juicy portobello mushrooms. But you can make it as simple as you like.


4 slices of wholewheat seeded bread
2 teaspoons olive oil
3 tablespoons of cream cheese or silken tofu
1/2 red bell pepper
1/2 green pepper
1/2 cup white/button mushrooms or 1 large portobello mushroom
1/2 avacado


  1. Brush the oil on the outer side of the bread and keep aside.
  2. In a food processor, do a quick blend of the bell peppers, mushrooms and the cream cheese. If you use portobello mushrooms, you can grill them separately, slice and add to sandwich.
  3. Add the cream cheese blend to the inner side of the bread. Top with slices of avocado and close the sandwich with another slice.
  4. Heat the sandwich in a grill and serve hot.
