This kids favorite is finally made healthy with non-processed ingredients and 'hidden' vegetables. Kids love its cheesy flavor while moms pride the healthy goodness camouflaged inside. I usually like it chunky and add strips of juicy portobello mushrooms. But you can make it as simple as you like.
- Brush the oil on the outer side of the bread and keep aside.
- In a food processor, do a quick blend of the bell peppers, mushrooms and the cream cheese. If you use portobello mushrooms, you can grill them separately, slice and add to sandwich.
- Add the cream cheese blend to the inner side of the bread. Top with slices of avocado and close the sandwich with another slice.
- Heat the sandwich in a grill and serve hot.
