Her super simple yet delicious winter recipe includes seasonal vegetable such as pumpkin or winter squash, sweet potatoes and brussel sprouts. This trio of veggies is packed with nutrients and antioxidants. Perfect for the busy healthy woman and family!


3 tablespoons olive oil
1 butternut squash or 1 medium pumpkin
1 sweet potato
1 cup brussel sprouts
Salt and pepper to taste


  1. Coat an oven safe dish with 1 tablespoon oil (both on the bottom and the sides). Pre-heat oven to 450° F.
  2. Cut butternut squash, sweet potatoes, and brussel sprouts into pieces and place into dish.
  3. Toss with remaining oil and season with salt and pepper.
  4. Place in oven for 30-40 minutes or until fork inserted into squash or potato comes out easily, i.e. they are soft when cooked thoroughly.
  5. Serve hot as a side.
