I was surprised at myself when this took me literally less than 10 minutes to prepare! Not only was it SO tasty with a charred flavor but it's SUPER healthy too! Rich in vitamin C and antioxidants this is a no brainer for any side dish at home.
- On a high heated pan toss in the zuchhini and red peppers. Cook for about 5-7 minutes on high heat. Add remaining ingredients and cook for another 2-3 minutes on medium.
