Antioxidant rich veggie stir fry

I was surprised at myself when this took me literally less than 10 minutes to prepare! Not only was it SO tasty with a charred flavor but it's SUPER healthy too! Rich in vitamin C and antioxidants this is a no brainer for any side dish at home.

Ingredients

Zuchhini (two medium sized) chopped
Red bell pepper (1 medium sized) chopped
White pepper (1/4 teaspoon)
Garlic powder (1/2 teaspoon)
Salt to taste
Mint leaves (1 sprig) chopped fine

Instructions

  1. On a high heated pan toss in the zuchhini and red peppers. Cook for about 5-7 minutes on high heat. Add remaining ingredients and cook for another 2-3 minutes on medium.
  2. It's as simple as that!
